Easy Garlic Trout

We eat a lot of fish, it’s quick and easy to cook, is healthy and the vast choice can be adapted in so many ways.

Easy Garlic Trout

 

Ingredients for two people:
2 rainbow trout fillets,
2 large garlic cloves, crushed
2 tablespoon-sized knobs of ‘real’ butter,
1 tablespoon of fresh parsley, chopped, and some sprigs for garnish

 

Method

In a small bowl, add the crushed garlic cloves and parsley to the butter and mix together.

As the fish will only take about 6 to 7 minutes to cook, you will need to prepare and cook your vegetables or other accompaniments almost totally before starting to cook the fish.

Season the trout on both sides with a little salt and black pepper.

 

 

Heat a frying pan or griddle pan until hot and then add half the garlic butter, turning the heat down to medium so as not to burn the butter.

 

 

 

Once melted, add the fish, skin side down, placing a knob of the remaining butter on top of each fillet.

Continue to cook on a medium heat for about 3 to 4 minutes until the skin is crispy.

Turn the fish over and cook for another 3 minutes or until the fish is golden.

Serve with your choice of vegetables or side dishes. On this occasion I did sweet potato, carrot, broccoli and fine beans.

Pour some of the garlic butter from the pan onto the fish…delicious!

It’s as simple as that!

Mashed potato
Jacket potato
Wholegrain rice cooked with frozen mixed veg, some herbs and a stock cube
Roasted mixed vegetables
A fresh green salad

This dish is so adaptable, just play around with flavours that you like.
